Why does a Tuesday or Thursday holiday matter so much?
Because it becomes a long weekend. Many people take the Monday or Friday off, footfall shifts day and ingredient purchases have to be brought forward. A mid-week holiday usually moves four days, not one.
Does the calendar include local holidays?
No. Only national holidays. State and municipal holidays vary by city and have to be checked with the local council.
